This unit for the production of soft dough, shortbread, and low fat cookies is designed to give high levels of performance in terms of running speeds, the quality of the dough pieces formed and consistency of production. The fine-tuning adjustment of the height of the knife ensures precise control of the weight of each dough piece.
For high production rates with a very long oven and short baking times, Imaforni provides the Rotary Moulder, in which all the rolls are 390 mm in diameter. The peripheral speed is therefore lower and the quality of the extraction of the dough pieces from the mould to the belt is smooth and ideal.
In order to enhance the range of products to be formed, auxiliaries devices can be added to the unit: the egg wash unit or the ink printer, deposit decorations on the top surface of the dough shell, making the final products more appealing.
The machine can be customized to suit the baker’s needs: the control system can be fully servo-motorized and all the adjustments can be made using a operator screen interface with a recipe storage system. As always, particular attention was paid during the design stage to the sanitary and hygiene requirements of the machine, and all the parts in contact with the dough are made of stainless steel. External covers are made of either stainless steel or transparent material in order to permit visual inspection for cleaning or servicing.
All the mechanical components of the unit are housed outside the frame of the machine. This solution, which is in line with company design philosophy, ensures perfect sanitation and easy cleaning of the machinery and facilitates access for inspection and servicing.
The rotary moulder (260 or 390 mm diameter rolls) can be supplied with a working width from 1000 up to 1700 mm.
