For the production of crackers, attention is usually focused entirely on the process – the forming or the baking – but there are also many other aspects which are critical and require a lot of knowledge and expertise in order to make a high-quality product: one of the most delicate ones is the oil spraying system.
The unit designed by Imaforni consists of a set of spinning disks which rotate at a fixed speed. A pump system sprays the oils through a nozzle against the surface of the spinning disk. Specially designed adjustable guides ensure that the oil is uniformly distributed across the bandwidth.
It is equipped with two independent systems, one positioned on top, the other at the bottom of the wire mesh conveyor. The operator is thus able to easily regulate the amount of oil between top or bottom.
The oil is contained in a jacketed and heated tank located in the frame of the machine, while a re-circulating adjustable pump conveys the oil to the nozzles.
The excess oil which is not taken by the product is re-collected in the same bin.

filters ensure the collection of debris or crumbs.
The unit is fully constructed in AISI 316 stainless steel while the shape and the special design of the edges of the hood ensures that the oil mist does not escape from the machine, leaving a clean space around the unit – a solution much appreciated by all experienced production managers. The machine as a whole is mounted on wheels so that it can easily be moved to the washing room.
The adoption of the spinning disk system, as opposed to the nozzle system, avoids the incorporation of air in the oil, with consequent reduction in the degree of oxidation and to obtain a higher quality final product with extended shelf life. The typical application is for topping crackers or savoury snacks with fractionated refined vegetal oil.
Our technical department has designed this equipment in order to provide even and uniform oil distribution across the entire width, from the beginning to the end of the production shift.
In our experience, working widths of up to 1500 mm are generally used for fast cracker lines of up to 40 m/min.
